This 7UP pound cake is everything you love in a pound cake. Rich but not too sweet. The 7UP flavor is subtle and a slice is perfect with a cup of coffee, tea, or glass of milk.

Ingredients for this recipe

All of the ingredients you need for 7UP pound cake are readily available. Make sure all of your ingredients are at room temperature before making this recipe. Soda included.

  • Butter – Use salted. There is no salt in the recipe.
  • Sugar – Granulated sugar.
  • Eggs – The recipe calls for large eggs.
  • Lemon Juice – Fresh is best.
  • Vanilla Extract – Use pure vanilla extract.
  • Flour – All Purpose is what the recipe calls for, I have not tried it with any other type of flour.
  • 7UP – A lemon-lime soda.
  • Confectioners’ Sugar – Also known as powdered sugar.
  • Lemon and Lime Zest – A little bit of both.

What does 7Up do for a cake?

7UP is used in place of traditional leavening ingredients such as baking soda or baking powder. You’ll notice there is no leavening in the recipe. The carbonation from the soda helps the cake rise and gives it a lift.

For the glaze, I only used 7UP, confectioners’ sugar, and lime zest. The 7UP adds that lemon-lime flavor in a somewhat subtle way.

7UP pound cake is tasty by itself but you could certainly serve it with mixed berries and a bit of whipped cream if you’re looking to dress it up.

A scoop of vanilla ice cream would also be a delicious idea.

If you prefer to leave off the citrusy glaze, you can give the cake a light dusting of powdered sugar to finish it off.

How do you store a pound cake?

This 7UP pound cake will stay fresh, covered on the counter for up to 4, maybe 5 days. It does not need to be refrigerated.

Ingredients

Cake

  • 1 ½ cups salted butter, softened
  • 3 cups sugar
  • 5 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • ¾ cup 7UP soda

Glaze

  • 1 ½ cups confectioners’ sugar
  • 1 to 2 tablespoons 7UP soda
  • ½ teaspoon grated lemon or lime peel optional

Instructions

  • Preheat oven to 350℉. Grease and flour a 10-in. fluted or plain tube pan.

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7-Up, beating well after each addition.

  • Transfer batter to prepared pan. Bake 65-75 minutes or until a toothpick inserted in center comes out clean. Cool in pan 20 minutes before removing to a wire rack to cool completely.

  • For glaze, in a small bowl, mix confectioners’ sugar and enough 7-Up to reach desired consistency. If desired, stir in lemon peel. Drizzle over cake.
