Kansas State Willie’s Wild Chili Recipe

While most chilis utilize beef, this recipe relies on its leaner cousin, ground
bison. As a result, the flavor is more robust but with less fat.

Ingredients ForKansas State Willie’s Wild ChiliRecipe

  • 12-ounces bacon, chopped
  • 1 Large yellow onion, chopped
  • 2 Cloves of garlic, minced
  • 2 pounds of groundbison
  • 2 cans of Bud light beer
  • 1 candiced tomatoes
  • 2 tablespoonstomato paste
  • 1 can chili-style beans in chili gravy
  • 2 tablespoonschili powder
  • 1.50 teaspoonsground cumin
  • 2 teaspoons of hot chile sauce
  • salt
  • 1/2C. of sour cream
  • 1/2C. of shredded sharp cheddar cheese
  • 3 Green onions
  • 5-Large russet potatoes
  • olive oil
  • sea salt
  • ground black pepper


  1. In a Dutch oven, cook bacon over low heat until browned and crispy, about 5 minutes. Add onions and garlic and cook 3 minutes, stirring occasionally. Add bison and cook over medium heat, using a wooden spoon to break up meat as it cooks, until well browned.

  2. Stir in beer, diced tomatoes, tomato paste, chili beans, chili powder, cumin, and hot sauce. Bring to a boil; reduce heat to maintain a simmer. Simmer until thickened, about 1 hour. Season with salt to taste.

  3. Meanwhile, prepare Baked Potatoes: Preheat oven to 375 degrees and line a baking sheet with aluminum foil. Scrub potatoes with a brush under running water. Using a dinner fork, poke holes through the skin of the potatoes. Coat potatoes with olive oil, sprinkle with kosher salt, and place potatoes on a prepared baking sheet. Bake for 1 hour or until there is no resistance when a potato is poked with a knife.

  4. Slice Baked Potatoes in half. Serve chili over potato halves topped with sour cream, cheese, and green onions.

  • 4tablespoonsvegetable oil,divided (or as needed)
  • 1sweet yellow onion,halved and thinly sliced (2-inch slices)
  • 1red bell pepper,thinly sliced
  • 1green bell pepper,thinly sliced
  • 2½ to 3poundspetite sirloin,thinly sliced sirloin
  • 1teaspoonLawry’s Seasoned Salt,or another all-purpose seasoning, divided
  • 1teaspoongarlic pepper,divided
  • 8hoagie rolls
  • 6tablespoonssoftened butter
  • 7ouncessliced Provolone cheese


  • Before starting, place beef in the freezer for about 20 to 30 minutes. This will make it easy to slice thinly.

  • Add 2 tablespoons vegetable oil to a large, deep (14-inch) sauté pan and place over MEDIUM-LOW heat. Add onion and bell peppers. Allow to cook, occasionally stirring, until very tender. If they begin to brown, turn the heat under the skillet down a bit. While the veggies are cooking, prepare the steak, returning to stir every now and then.

  • Remove the steak from the freezer and place it on a cutting board. Use a sharp knife to trim the edges of excess fat and then slice it as thinly as possible across the grain. Chop the sliced steak into very small pieces. Keep chopping until you can chop no more! You want little ¼-inch-ish pieces. Check on those veggies periodically while you’re prepping the beef.

  • When the veggies are tender, transfer them to a dish and return the skillet to the heat. Add additional oil and place over MEDIUM-HIGH heat. Add half of the chopped steak and cook, frequently stirring, for about 4 to 5 minutes or until no pink remains. Season with ½ teaspoon each seasoned salt and garlic pepper while cooking. Transfer the first batch of steak with a slotted spoon to the dish with onions and peppers, leaving the juice in the pan. Add additional oil, and repeat with the remaining steak and seasoning.

  • Preheat oven to 400 degrees F.

  • Split open the hoagies rolls but do not separate them. Spread them with the softened butter and place them on a baking sheet. Transfer the baking sheet to the oven and bake for 3 to 5 minutes or until lightly golden and toasted.

  • Drain off all of the juices from the pan and return to the stove. Add back all of the steak and the onions and peppers. Place 7 provolone slices over the mixture in a circle and cover the pan. Cook on MEDIUM until cheese melts, about 4 to 5 minutes, then stir and use tongs to transfer to the toasted sandwich rolls

If you’re a die-hard Philadelphia Eagles fan, there’s no doubt Super Bowl LVII will be one of the biggest nights of the year. And if you’re throwing an Eagles-themed party, you’ll need something delicious and beautiful to wash down all those cheesesteaks.

  • One 6-ounce can of pineapple juice
  • 1/4 cup blue curacao
  • 1/4 cup vodka
  • 2 tablespoons freshly squeezed lime juice
  • Mint leaves for garnish (optional)


Fill a co*cktail shaker or pint glass halfway with ice.

Pour the pineapple juice, blue curacao, vodka, and lime juice into the shaker or glass, and shake or stir as appropriate.

Strain the co*cktail into the martini glasses, dividing it evenly between them.

Garnish each co*cktail with a sprig of mint leaves.

Serve immediately.

Kansas City Water

This drink is delicious, and honestly, you won’t know it even has alcohol in it. They say the best defense is a good offense, and this drink packs a punch, but in a sneaky fast way. Too many of these too quickly, and you won’t remember anything past halftime.

  • ½ozlime juice
  • Sprite


  • In a 10-12 oz glass, add ice

  • Pour gin and vodka over the ice

  • Mix in triple sec and lime juice

  • Add Sprite to fill and stir

  • Garnish with a lime and serve
