What ingredients do I need to make these Easy 7up Biscuits?
- Bisquick mix: I useHealth Smart Bisquick which has lower points than the original Bisquick. You can find it HERE online on Amazon or at your local Walmart store. You can use the orginal Bisquick if you can’t locate the Health Smart Bisquick. They point value would increase by 1 Smartpoint if you were to use that one instead. If you follow a gluten-free diet, you can use a Gluten-Free Bisquick. You can find it HERE on Amazon.Bisquick is basically a pre-made mixture of flour, salt, baking powder, and shortening.
- Diet 7 Up or Sprite: you can use diet 7UP, Sprite Zero, or diet lemontwist.
- Nonfat plain Greek yogurt: I recommend using a thick brand such as fa*ge or Chobani. The thicker the yogurt the less sticky the dough will be.
- Light Butter– The butter gives these biscuits a delicious buttery flavor and a golden bottom crust. I like to use Land o’ Lakes light butter made with canola oil. If you can’t locate that brand-any light butter will do.
How do I make theseEasy 7up Biscuits?
Preheat oven to 450 degrees.
Place light butter in a 9-inch baking pan and insert in the ovenuntil the butter melts. (about 1-2 minutes)
In a large mixing bowl, combine 2 cups bisquick baking mix, diet 7up, and Greek yogurt until JUST combined.
Sprinkle the counter top with 1/4 cup of baking mix and dump the dough out onto it.
Add flour to your hands.
Roll out or press out with your hands to about 1/2 inch thickness.
The dough will be very wet and sticky-but don’t worry-they will turn out.
Cut dough in circles using the rim of a cup or using or biscuit cutter.
Place biscuits on top of the melted butter in the prepared baking dish.
Using a basting brush-brush the tops of the biscuits with the extra melted butter from the baking dish.
Bake for 10-12 minutes or until golden brown.
Let cool for about 5 minutes before removing from the baking dish.
Serve with your favorite sugar free jam/preserves.
